Pea Pickin' Rice Salad
3/4 cup uncooked long grain Rice, can use minute rice 1 (10 oz.) pkg. Frozen Peas, defrosted 1 small Red Bell Peppers, diced 3/4 cup Green Onion, chopped 1/2 cup Cranberries, dried DRESSING: 1/2 cup Canola Oil 1/3 cup White Vinegar 1/2 tsp. Dill Weed 1/4 tsp. Salt 1/4 tsp. Ground Mustard 1/8 tsp. Black Pepper |
Cook rice and cool in large bowl. Combine rice, peas, red bell peppers, onions and cranberries. In a small bowl, whisk dressing ingredients. Drizzle over salad and toss to coat. Chill before serving. Makes twelve 1/2 cup servings. ** Recipe from Arts & Service League Luncheon ** |
